It is shown that edible insects are used in various countries of the world as food additives and raw materials for dietary protein. So, it is known that the inhabitants of Asia and Africa currently eat about 2000 species of edible insects. Insects have a high protein content (40-75 g per 100 g of dry weight), which is perfectly absorbed (77-98%).
