Methods of analysis and methods of quantitative determination of the main components of milk, which make it possible to distinguish human milk from animals, are discussed. It has been shown that there are correlations between the content of saturated and unsaturated fatty acids. Given that the total fat content of milk is a phenotypically dependent value and does not depend on the diet, but the ratio of milk fatty acids depends on the diet. Instrumental methods for determining the fatty acid composition, amino acids of milk protein, lactose are presented.
<kwd-group xml:lang="en"><kwd>human milk</kwd><kwd>fatty acid composition</kwd><kwd>amino acids of milk protein</kwd><kwd>lactose</kwd><kwd>phenotypic variability</kwd></kwd-group><kwd-group xml:lang="ru"><kwd>женское молоко</kwd><kwd>жирнокислотный состав</kwd><kwd>аминокислоты молочного белка</kwd><kwd>лактоза</kwd><kwd>фенотипическая изменчивость</kwd></kwd-group></article-meta></front><body></body><back><ref-list><ref id="B1"><label>1.</label><mixed-citation>Handbook of Food Chemistry.
